2021 Triomphe Cabernet Sauvignon
Hand-harvested from vines on our estate, Biodynamic vineyard. Grapes were fully destemmed and fermented wild in eight-ton oak fermenters and left on skins for 31 days. After pressing, the wine was aged in French oak barrels for 18 months before careful barrel selection and blending. No fining and a light filtration was done before bottling.
Aromas of blackberries, cassis and red licorice. A palate that mimics the nose, which is complemented by velvety tannins and a rounded acid finish.

To get a quality Ontario Cab Sauv for $40+ seems to be the normal price threshold, but to get one of this quality and richness for $29.75, and for it to be organic, is incredible. Maybe one of the best wine buys in the Niagara area. Silky tannins provide a wonderful dryness and full flavours that screams $40+. You can certainly bring this Cab to anyone who thinks Niagara can’t produce a wonderful and affordable Cab and open their eyes.
