2021 Estate Cabernet Franc

Harvested from the Southbrook estate vineyard on October 18th. All clusters were destemmed, leaving many whole, uncrushed berries to ferment in small-batch fermenters. After 18 days maceration time with skins, the wine was pressed and transferred to four French oak barrels (one new) for 18 months of aging before bottling.

This wine shows lots of earth character on the nose mingled with fresh, dark fruit aromas of black plums and blueberries. A dry palate with vibrant acidity and fine grained tannins. Cocoa, toast and strawberries  meet with a savoury backbone on the palate.
